Makes 12 large cookies
180g plain flour
90g butter, softened
110g soft brown sugar
1 tsp vanilla extract
1/2 tsp bicarbonate of soda
Pinch of salt
70g dried cranberries
70g white chocolate chunks or chips
In a large bowl, cream the butter and the sugars together until light and fluffy.
Add the vanilla and egg and mix until well combined.
In a seperate bowl, sift together the flour, salt and bicarbonate of soda.
Gradually add the dry ingredients to the butter and sugar mix, stirring after each addition until a soft dough is formed.
Mix in the cranberries and white chocolate until well distributed.
Cover the bowl and chill in the fridge for a minimum of one hour.
Preheat the oven to 180ºC and line two large baking sheets with greaseproof paper.
Take walnut-sized balls of mix and roll them into balls with your hands.
Place each ball onto the baking sheet and press down lightly with the palm of your hand. Make sure that you leave a couple of inches between each cookie to allow space for them to spread.
Bake the cookies for 8-10 minutes. They will look slightly pale but will continue to cook on the baking sheet.
Leave to cool on a rack then eat, share and enjoy!
